An Easy Breakfast Option

I love this as a breakfast option and the beauty of it is that you can keep it to only two ingredients or you can doll it up with all kinds of other simple options. Normally, I end up putting in quite a few other simple ingredients, but it certainly doesn’t need it. Here it is.
You can get creative with other things that you might like to add to the pancake. I have tried some different things and I have also tried using just egg whites, but that has not been very successful for me.
Here are some other options you can add (especially for Fall):
Pumpkin Pie Spice
All you need to do is mash your banana in a bowl and crack one egg. Mix it all together and pour in a small skillet. Put the heat on medium and be patient and let it cook fairly slow. This is when I might add some cinnamon, chia seeds and pumpkin pie spice. If I were to add the pumpkin puree, I would have mixed it in with my banana and egg before pouring it into the skillet. Once you see the little bubbles in your pancake, very carefully flip it over. This takes some practice. I have mastered the quick flip in the skillet without having to use a spatuala, but it’s taken quite a bit of practice.
Once your pancake is cooked, feel free to top it with berries, peanut butter, pumpkin butter, chocolate chips, syrup or whatever you might be in the mood for.
And don’t get frustrated if your first attempt doesn’t come out looking very pretty. It still tastes good, I promise!
