Recipe Friday: Cookies & Creme Pudding Cake

Cookies & Creme Pudding Cake Recipe

By: Elizabeth Porter

Looking for a new cake recipe?  Try this delicious pudding cake.  It is so easy because there is no need to stack the cakes, no trimming the high spots from uneven baking and no frosting.  It’s sweet, but not overly rich and the pudding topping keeps the cake moist.

The simplicity of this recipe gives you lots of flavor combinations.  I did a fudge flavor cake with cookies and creme but with so many different cake and pudding flavors like coconut, butterscotch, banana, white chocolate, cheesecake and even lemon, the choices are endless.

Which flavor combination will you try first?

Pudding Cake Ingredients

Chocolate or Fudge Cake mix

Cookies & Cream Pudding mix (2 boxes, each 4 oz)

Ingredients as called for on cake and pudding: mine used milk, eggs & oil

9×13 dish (or two smaller ones)

1. Bake cake as called for on the box

2. Don’t prepare pudding until just a few minutes before the cake is done. It needs to be very liquid-like so it pours easily.

3. While cake is warm, poke holes throughout. I used the end of a wooden spoon.  Don’t do the holes too close, it could cause the cake to collapse in that area.

4. Pour the prepared pudding mix over the top of cake, aim the pudding in the holes.

5. That’s it, your done.  I left my cake out for a little while so the glass cooled before I put in the refrigerator.

When I made my cake it disappeared quickly.  One thing to keep in mind is the expiration of the milk you used in the pudding.  To be on the safe side, I wouldn’t keep it any longer than the date listed on your milk jug.

YUMMY!!  I obviously love working with Jello….Did you see my other recipe for Cherry Cheesecade dip here???  What recipes do you cook that require a Jello product???
