Homemade Frittata Recipe

I have become addicted to this recipe and the best part about it is that it is quick and easy and you can enjoy it all week long.

I needed something in the mornings that I could eat on the fly and that would hold me over until lunch.  I started making this frittatta a couple of weeks ago and I haven't gotten sick of it yet.  It is actually great for breakfast, lunch or dinner and you can really change up the ingredients to put anything you like in it. 

Here is the recipe I use and feel free to change it up however you like:

10 inch Cast Iron Skillet–or any type you can put into the oven

6 Eggs

1/2 C. Egg Whites

1 package HOT Jimmy Dean's Sausage

1/2 of one Videlia Onion

1/2 C Shredded Cheese

1/2 C Mozzerela Cheese

Salt and Pepper

 

Cook your sausage and onions in skillet first and then drain.  Add sausage and onions back into skillet and add your eggs and cheese and salt and pepper to taste.  Place entire skillet in the oven on 350 degrees for about 20 minutes or until fully cooked. 

Viola! You have breakfast for a week!
