Grilled Swordfish with Pineapple-Mango Salsa Recipe

Summer is here, let the cook-outs begin.  This is sure to be your next weekend favorite.  I love to have friends over, put on my apron, slice and dice fresh produce from the farmer's market and prepare tasty, healthy dishes.  

With just a few ingredients from your local supermarket or local farmer's market, you too can make this delicious meal which is perfect for lunch or dinner.  


Grilled Swordfish with Pineapple-Mango Salsa Recipe

Recipe Ingredients:

(2) 1 ½ inch thick swordfish steaks

Wood chips soaked in cranberry juice

(1) ripe mango

½ fresh pineapple

Good quality barbecue sauce (I make my own)

1/2 cup diced Vidalia (sweet) onion

¼ cup diced red pepper

¼ cup diced yellow pepper

DO NOT USE GREEN PEPPERS (delete peppers if needed).  Green peppers will ruin recipe.


Pam cooking spray

1/4 cup chopped cilantro

Recipe Directions: 

Dice mango and pineapple, spray pan and sauté` onions and peppers until onions are translucent.  Add pineapple and mango, and ¾ cup barbecue sauce.  Cook until mixture starts to thicken (about 2 to 3 minutes) on low heat.  Add cilantro and stir.

Coat fish with molasses, and spray grill.  Get grill to medium heat.  Add wood chips, wait 2 minutes and put fish on grill with lid closed.  Cook 5 to 6 minutes on each side, (every grill is different).  TURN ONLY ONCE.

Salsa should be warm, but not hot.  Serve over fish and enjoy.

  • Note about swordfish:  it is ok to serve medium to medium well.  This is a fish that is very good not overcooked.
  • This salsa can be used with any grilled fish.
