Drunken Pirate Ribs

THEN LOOK NO FURTHER. GET READY TO PREPARE “DRUNKEN PIRATE RIBS” FOR YOUR 4TH OF JULY CELEBRATION. IT’S PROVEN TO BE A CROWD FAVORITE.

You will need:

  • A Grill
  • A very large pan like a roasting pan here is the one I use a large Le Creuset’ it distributes the heat well But a turkey roasting pan will work.
  • 4 Tbsp Olive oil
  • ½  cup Bill’s secret dry rub (recipe below)

2 cups Brown Sugar

1/4 cup Paprika

2 Tbsp Steak Seasoning

(I use McCormick’s)

2 Tsp Chili Powder

1 Tsp Cayenne

1 Tsp Kosher salt

1 Tsp Black Pepper

2 Tsp Cumin

1 Tsp Garlic Powder

1 Tsp dry Oregano

 

Mix Together and store in a tight closing jar. Keep in a dark dry place like a cabinet in the kitchen.

  • 1 full rack of Baby Back Ribs you can use Saint Louis but Baby Backs are much better.
  • 750 ml bottle of “cheap” Rum (buy cheap you won’t get to drink any of this)
  • Your favorite BBQ Sauce (I like Sweet Baby Rays)

 

Remove membrane from back of ribs (MOST IMPORTANT STEP)

Use 1 tbsp olive oil on back (membrane side) of ribs work in then use a little less than 1/8 cup of the dry rub rubbing in well.  On meat side of ribs use remaining tbsp of olive oil and repeat using a little more than 1/8 cup of the rub.  Wrap the ribs in plastic wrap tightly and refrigerate overnight.  About 5 hours before serving time remove ribs from refrigerator and pre heat oven to 325 pour whole bottle of rum into roasting pan and add ribs.  Cover and cook without opening oven for 3 hours.  Remove from pan and discard the rum.  Let ribs cool at least an hour Repeat the olive oil and dry rub as above with the remaining rub and oil, then start the grill (you don’t want the grill too hot, but need it hot enough to caramelize)  about Medium to medium high. Cook ribs about 15 to 20 minutes until they start to brown a little then add the BBQ sauce.  Everyone has a preference here some people like to “burn on the sauce” some people add only long enough to heat and some people only dip in the sauce. I say try it all three ways just not be sure after all why not eat ribs three weeks in a row.
